Dave and I loved this one....the kids not so much. They were good about taking their "thank you bites" though.
I adapted this recipe from Super Immunity by Joel Fuhrman
1 medium green bell pepper, chopped
1/2 cup chopped onion
1 cup tomato sauce, divided
2 cups cooked black beans (I cook mine in a crockpot - triple the amount of water, cook on high for 3-4 hours)
1 cup frozen corn kernels
1 tablespoon chili powder
1 teaspoon ground cumin
1 teaspoon onion powder
1 tablespoon chopped fresh cilantro
6 corn tortillas
Saute the green pepper and onion in 2 tablespoons of the tomato sauce until tender. Stir the the remaining tomato sauce, plus the rest of the ingredients. Layer the mixture with the tortillas as you like. Bake for 15 minutes at 375 degrees.
